  • 200ml whole milk
  • 2 tbsp butter
  • 1 tsp ground turmeric (optional, for color)
  • Pinch of nutmeg
  • Sea salt & black pepper
  • Optional: 100ml double cream for richness

The Method

Melt butter in a large pot over medium heat. Add onion and cook for 5-6 minutes until soft. Add garlic and cook for 1 minute until fragrant. Add cauliflower florets and potato cubes. Stir to coat. Pour in vegetable stock and bring to a boil. Reduce heat and simmer for 20-25 minutes until vegetables are very tender. Use a hand blender to blend until completely smooth. Stir in milk and nutmeg. Season with salt and pepper to taste.
